AB La expansión e intensificación del olivar se observa por doquier en lospaíses mediterráneos. En Marruecos, Argelia y Túnez encontramos unacontrastada convivencia de modernidad y tradición, mientras se implementanpolíticas públicas que tratan de reforzar este sector productivo. El objetivo deltrabajo es analizar los factores de cambio de los modelos de negocio oleícolaen estos tres países. La investigación se ha nutrido de fuentes bibliográficas,documentales y trabajo de campo, consistente en la realización de sesentaentrevistas con diferentes actores implicados en estos procesos. Los resultadosnos han permitido identificar el avance de las plantaciones de alta densidadregadas y los factores que lo impulsan
AB The expansion and intensification of olive growing can be observedeverywhere in Mediterranean countries. In Morocco, Algeria and Tunisia thereis a contrasted coexistence of modernity and tradition, while public policiesare implemented to strengthen this productive sector. The objective of thework is to analyze the factors of change of olive business models in these threecountries. The research was based on bibliographic and documentary sourcesand field work, consisting of sixty interviews with different actors involvedin these processes. The results have allowed us to identify the progress ofirrigated high-density plantations and the factors that drive it
